Muhu kitchen conquers the world



One of the best restaurants in Estonia, Alexander Restaurant in Pädaste Manor, is closed at the moment. It is not the season on Muhu Island in winter. And all the better for it! It gives the chefs of Alexander, Peeter Pihel and Kristo Malm, an opportunity to look around in the world. And not only as tourists!

Just before Christmas, the third great visit of Estonian cooking took place in 2009. This time it was Excelsior Restaurant in l’Europe, hotel in Amsterdam. This house is not visited by random chefs. There you are used to something very special.

Is the kitchen of Norse islands offered by Peeter and Kristo so special? Yes, it is!







The beginning and end of the menu.

Carefully chosen and even more carefully prepared selection from the few Baltic Sea foods had again made a step forward. Spiced Baltic sprats and smoked cheese and dark bread together with little tricks made the experienced ladies and gentlemen raise their eyebrows with surprise.

But the “Hapurokk” from Muhu had not changed a bit. Those who know it, can't want anything more. Is it a classic already?







A small side dish - “kama” cream. “Kama” is the only food that is almost our own. It simply must be served when we represent ourselves somewhere.

The taste of “kama” does not directly sweep anybody off their feet. Yet it is certainly exotic.

For an Estonian who is used to the rustic homely “kama” it still has a very delicious taste.

On this plate there is the component of the menu that brought about the liveliest discussion. No, it is not the lamb in its goodness. It is that black substance which looks like mashed potatoes by its texture.

None of the eaters could guess that it was the burnt vegetables! And the taste was also indescribable! There are always some random visitors at such hotel dinners. In one of the Asian countries, people are probably telling a legend right now of a small island in the Baltic Sea where people do nothing more than incredibly delicious food.

Moreover, it was one of the most emotional presentations that has ever accompanied Estonian food abroad. The latter was taken care of by an opera soloist from Germany.

TOP 50 OF ESTONIAN RESTAURANTS

This ranking is born out of the votes of the key employees of various Estonian restaurants. Each voter compiles a personal list of 7 restaurants that he or she thinks are the best in Estonia. The voters must have visited these places and the list cannot include the voters’ employers or restaurants related to their personal property. 

The restaurants that have been included in someone’s top 7 are invited to cast their votes as well. Each restaurant can appoint up to three of their most important employees as their voters: one member from the management team, one member from the kitchen staff and one member from the service staff. 

Taking part in the voting is strictly voluntary, not obligatory. The top 50 of Estonian restaurants is made up of restaurants that win the greatest number of votes.
