The best chefs from Finland and Estonia are cooking together.

The best fifty restaurants have been chosen for the last four years in Finland and two years in Estonia. Since the beginning, one and the same restaurant has turned out to be the best in both countries. Chez Dominique in Finland and Ö in Estonia.

Both also have similar reasons for success. The chef’s personality, his devotion and “signature style”. At the beginning of June, there will be an event where the best food from both shores of the Gulf of Finland is served on the same table. Hans Välimäki and Roman Zastserinski, chefs of the best restaurants will be cooking together.

Chez Dominique and Ö are both restaurants with modern cuisines. Chez Dominique with its two Michelin stars is in a  “league of its own” that sets it clearly apart from other restaurants in Finland. Ö has discovered the unique peculiarity of local food through Scandinavian and international cuisines.


Hans Välimäki’s dishes are extremely sophisticated. A lot of work is done with the best ingredients. When a dish is listed as Anjou dove on the menu, it is  actually served with plenty of garnish and has substantially more flavours than the eater is accustomed to get from a dish.

The Estonian chefs who have worked at Chez Dominique later recall long days filled with work from start to finish. Military discipline and good division of work. One look at a plate is enough to understand what the chefs are talking about.

The joint menu of the two chefs was created by Roman who has adjusted his dishes to go with Hans’. Roman’s dishes are considerably simpler. There are fewer flavours on a plate at once and the flavours are more down to earth.

This can easily be seen from the different presentation of the dishes. Nonetheless, the two different styles make a unique combination. Eating is like a thriller where each new move makes one curious as to what comes next.

Hans travels a lot and is one of the first to try out new ideas. Roman deliberately travels little and wants to develop by himself in his own environment without any strong influences.

TOP 50 OF ESTONIAN RESTAURANTS

This ranking is born out of the votes of the key employees of various Estonian restaurants. Each voter compiles a personal list of 7 restaurants that he or she thinks are the best in Estonia. The voters must have visited these places and the list cannot include the voters’ employers or restaurants related to their personal property. 

The restaurants that have been included in someone’s top 7 are invited to cast their votes as well. Each restaurant can appoint up to three of their most important employees as their voters: one member from the management team, one member from the kitchen staff and one member from the service staff. 

Taking part in the voting is strictly voluntary, not obligatory. The top 50 of Estonian restaurants is made up of restaurants that win the greatest number of votes.
